Very colorful Blog! Glad to know that you are seeing the beauty of the country amidst it's shortfalls. How does the Nicaraguan food compare to that of Costa Rica and Ecuador?
Nicaraguan food is similar to that of Costa Rica. They both LOVE rice and beans ("gallo pinto").
In Ambato, Ecuador the local delicacy was guinea pig.
Need I say more?
